When I saw these Skinny Funfetti Cupcakes on Pinterest the other day, I knew I had to make them. I mean frosted cupcakes for 110 calories each? Sign me up. After a quick trip to Target for supplies (Sprite Zero, Vanilla Pudding Jell-O and Cool Whip), I enlisted the help of my favorite baking buddies and we got to work. I had some Funfetti cake-mix (bought on Target super clearance of course), so we didn’t need that. L is used to make the recipe on the box (he “reads” it to me), so he was a little annoyed that we didn’t use the normal stuff (he likes to crack the eggs). The revised recipe was SO EASY:
Cupcake Ingredients (makes 24 cupcakes):
~1 pkg. Pillsbury Funfetti Cake Mix (just the powder, not the recipe on the box)
~1 (12 ounce) can Sprite Zero
I’m sure you don’t need me to tell you how to mix the Sprite Zero and Funfetti powde together. Bake at 350 degrees for 20 minutes. I should mention that when I read the directions on Six Sisters’ Stuff’s website, I read that I should fill the cups “1/4 full”. Umm, no, it said fill with 1/4 cup of batter. Totally different. That’s why my cupcakes are so little. Just fill like normal and you’ll be fine ;).
While the cupcakes are cooling, you can make the frosting.
Frosting Ingredients:
~1 (8 ounce) container Fat Free Cool Whip (I use Lite but only because Target didn’t have fat free)
~1 (1.5 ounce) pkg. Fat Free Vanilla Jello Instant Pudding (just the powder, not the recipe on the box)
All you gotta do is mix together and boom, you are done. I mixed it by hand, but only because I realized my hand mixer was broken (WTF) when I went to use it.
The verdict? YUMMY! Sure they don’t taste exactly like Funfetti cupcakes, but did you really expect them to? L wasn’t thrilled with them, but I think that’s because he couldn’t eat the batter like he normally does. He never really eats the final products. I fed one to his BFF and he LOVED it. I will definitely be making these again!
