The October 2016 BakeKit featured the ingredients and recipe to create a “Pumpkin Spice Latte Cake.”  From BakeKit:
“It’s a hashtag-worthy (#PSL) flavor practically synonymous with fall, and any coffee shop worth its beans has a version of the infamous Pumpkin Spice Latte this time of year.  So, we simply couldn’t resist bringing the pumpkin spice essence back to its roots in baked goods…and bringing the coffee along for the best of both worlds. It’s a cartable crowd pleaser”.

The box included all of the dry / canned ingredients needed in the recipe.  I had to add butter (2 1/3 cup) and eggs (6).

I was a tad thrown at first when I looked at the instructions and then on the labels on the ingredients.  They didn’t match the steps on the instructions.  I realized that they had broken the recipe down into groups, though.

Step #1 – Make the Topping

The first step was to make the topping.  You combined the topping mixture (brown sugar and cinnamon) with sliced butter until it reached a “sandy texture.”  My butter may not have been cold enough because I never got a “sandy” texture.  Mine was more of a wet sand.  No matter.  I put it in the fridge as instruction to chill while I made the rest of the cake.

The pumpkin layer consisted of canned pumpkin, sugar, salt and pumpkin pie spice.  I had to add two eggs.  After it was done, it was to be set aside.

Step #3 – Cake Layer

The cake layer consisted of two parts. One was mixing the dry ingredients (flour, baking soda and coffee), while the other was to mix the wet ingredients (2 cups of butter and four eggs).

After mixing those separately it was time to combine into one!  None of these steps were difficult or required any special tools (or special skills).

Step #4 – Get Ready to Bake!

This is a layer cake, so 1/2 of the cake batter went in the bottom of the greased pan, followed by the pumpkin layer and then the other half of the cake layer.  The top layers gets a little mixed together, but the instructions said that was fine.

The final step before putting in the oven was to sprinkle your crumble topping over the cake.  Mine still felt wet, but it didn’t look sandy in the picture either, so I figured I was okay.

I baked the cake for 55 minutes at 325 degrees (per the instructions), and it made my house smell amazing!

The cake turned out amazing!  B (my husband and taste tester) said it needed a little more coffee / spice flavor, but he gobbled up his piece in seconds.

    I hope it tasted like a $25 dollar cake but with your husbands comments I’m guessing it didn’t. What an expensive dessert. I would have to say no way to this one. You could go out for dinner and dessert for this price and you wouldn’t have to cook or clean up.

      Hi Lin. Thanks for your comment and “food” for thought! 🙂 We hear you! Depending on where you live and where you dine, you probably could go out for dinner and dessert for $25. The idea behind BakeKit is to bring the baking experience of unique desserts that you might not discover on your own, may be intimidated to try on your own and that include sometimes difficult to find ingredients. If all of the ingredients required for BakeKit recipes were purchased in full quantity (a whole bag of flour, a whole bag of sugar, a whole box of baking soda, a whole jar of coffee, etc.), the cost adds up to more than the price of a BakeKit, and much of this often goes to waste! BakeKit is designed to save time and money, eliminate waste and encourage flavor exploration! The price per box decreases with subscription. Hope this info helps!

    Wow! I’m not normally a fan of pumpkin in any edible item, but this sounded appealing. I wish the price point was a bit more attractive, though. I suppose the cost of time and curation is baked in (no pun intended). Maybe having two different desserts would have made me sign up. Perhaps an apple struesel cake, to continue with the fall theme and similar baking concepts? Thank you for the review!
