I really wasn’t sure what to make of all the Peeps in the box!
The March 2016 Batterbox recipe was for Surprise Vanilla Cupcakes with Vanilla Buttercream frosting.
All of the ingredients had labels on them, but they weren’t sticky enough so they ended up falling off in transit. Also, it looked like our vanilla may have leaked a little on the cupcake holders.
B decided to make these on Easter morning. There was some confusion regarding the instructions / labeling of the items. For example, the instructions showed that salt and baking powder were included in the box, but there were not any packages in the box with “Salt” or “Baking Powder” labels on them. There was a “Flour”, a “Sugar” and a “Powdered Sugar” package. We debated about adding salt and baking powder, but ultimately just decided to risk it and hope that they were included in one of the mixes. And luckily, they were. We did need to provide the wet / perishable ingredients, like butter, milk eggs, etc. ourselves.
While the cupcakes were baking B started on the frosting. We didn’t have any shortening, so we substituted butter. It wasn’t the prettiest frosting, but it sure was tasty!
According to the instructions, you were supposed to put the almond eggs into the cupcakes after they came out of the oven. Then let cool completely and top with your grass frosting (the box includes the pastry bag / tip) and a Peep. I don’t want to be surprised with an almond egg inside my cupcake (nor does B or the boys), so we opted to do some cupcakes with just almonds on top and some with just Peeps on top. So I guess we really didn’t make “surprise” cupcakes after all. But it worked better this way for us.
My kids loved the cupcakes (and I have to admit, they tasted really good), but Batterbox is pretty expensive for what you get. Also, this is just silly (on my part), but why did they only include blue Peeps? Why not mix it up a little with some pink and yellow and other Spring colors?
